Butternut Squash and Apple Soup:

This looks like a suitable dinner:

Butternut Squash and Apple Soup
Yield: 6 to 8 servings
Time: About 45 minutes

2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 leeks, white and light green parts only, chopped
¼ teaspoon ground nutmeg
2 teaspoons ground cinnamon
Salt and black pepper
3 medium apples, peeled, cored, and cut into large chunks
1 large butternut squash, peeled, seeded, and cut into small chunks
6 cups chicken or vegetable stock, or more as needed
One 7-ounce container Greek yogurt

1. Put the butter and oil in a large pot over medium-high heat. When the butter melts, add the leeks and cook, stirring occasionally, until soft and translucent, 5 to 7 minutes. Add the nutmeg and cinnamon along with some salt and pepper and stir for 30 seconds or so, then add the apples and squash and stir to coat them in the oil and spices.

2. Add the stock, turn the heat to high, cover, and bring to a boil. Reduce the heat to medium-low and simmer, adding more stock if necessary to keep the squash and apples covered with liquid. When the squash and apples are soft enough to be pierced easily with a fork, turn off the heat, add the yogurt, and purée with an immersion blender. Taste, add more salt if necessary, and serve hot, at room temperature, or cold.

We bought a groupon for an awesome bed and breakfast in St Augustine and went over Labor Day weekend. It was such a cute little town.

We stayed near Flagler College which was converted from an old hotel and is gorgeous!

We got a bunch of popsicles at the Hyppo on Hypolita.

We went to the Fort (of course):

Stella threw her barrette over the drawbridge and as I was retrieving it I bonked my head on the bridge and obtained a massive knot that is still there!

We saw a cool lighthouse.

Took some naps with “Pup”:

And topped off our trip with a visit to an AMAZING Alligator Farm:

I got my eyebrows threaded over lunch today. Am I just imagining that it is more painful than waxing? I think this every time but it just so happens to be more convenient so I keep doing it.

Also, my eyes leak like faucets while I simultaneously sneeze the whole time it is being done. That isn’t normal, is it?

Stella hasn’t had any dairy or soy since just after her 1st birthday when we found out she has a milk protein (and possibly a soy) allergy.

Luckily babies almost always grow out of this allergy. Could you imagine a life without cheese? Awful.

We had her tested for allergy antibodies on Monday to see if she had grown out of her allergies yet and I am SO EAGER to get these results.

I have been spending way too much time thinking about all the awesome foods she is going to eat this weekend if she gets the go ahead to stop being a meat-eating vegan.

Here is my list so far:

1. Mac & Cheese (she has never had it!)

2. Ice Cream (she has only had two bites ever!) Preferably in the form of a banana split shared with Mama and Dada

3. Greek yogurt (this was her fav)

UPDATE: Stella tested negative for allergies. Yay!

I am way too lazy to sync my camera to our crappy desktop and load pictures to Picassa and then to Flickr and then maybe post them on Tumblr. That never happens anymore. If something can’t be accomplished on my iPad it just doesn’t get accomplished.

I have avoided making corn chowder all summer because Stella can’t have dairy and she looooves corn chowder. It would just be cruel to eat it in front of her.

And now that summer and corn season is almost over it hit me. COCONUT CORN CHOWDER!
